Oatmeal Pie

  1. Pre-bake the pie crust for 10 to 12 minutes and then let cool for 10 minutes.
  2. Preheat the oven to 350F degrees.
  3. With a standing or hand mixer beat eggs until light and fluffy; 3 to 4 minutes.
  4. Add in the granulated sugar, brown sugar, flour, cinnamon and beat until well combined.
  5. Next add the corn syrup, melted butter and vanilla and beat until incorporated.
  6. Lastly fold in the oatmeal.
  7. Pour into the prepared pie crust and cook for 45 -55 minutes. Until the center has no jiggle.
  8. Let cool fully about 3-4 hours before slicing. Serve with ice cream if desired.
