Easy Chilaquiles from Leftovers

Chilaquiles are delicious but almost every recipe wants you to make them from scratch and then make your own enchilada sauce. Yes that’s possible but its a lot of work for a trivially simple dish.

  1. Put two frying pans on the stove and heat them up; add oil to the second pan for frying eggs.
  2. In frying pan one, put 1/2 the can of enchilada sauce.
  3. Add chips to the enchilada sauce and just let them bubble and soften.
  4. Crack the two eggs into the second and fry them as you prefer.
  5. Add the cheese and then the green onions. Put a lid on the pan and turn off the head. Leave in place while the cheese melts and the tortilla chips continue to soften.
  6. When the tortilla chips are soft, move the sauce & chips melange to a plate.
  7. Top with the fried eggs and enjoy!
